Buffalo Chicken Lettuce Wraps

Are you looking for an easy lunch or an impressive appetizer? These are so easy and so visually appealing. I love my buffalo sauce as much as I love my taco seasoning. We had a busy Saturday and not a lot of time to cook. Tonight I decided to make the most of my fridge and create these beautiful lettuce wraps.

This is so easy because I use a rotisserie¬†chicken (as I do with most of my recipes). I did all my grocery shopping early this morning to avoid the crowds so I had all this on hand. I shredded the chicken, added some buffalo sauce and folded it into the lettuce pieces. It’s then topped off with low fat blue cheese dressing and shredded carrots to add an extra crunch!

Buffalo Chicken Lettuce Wraps

Ingredients

  • 2 cups shredded chicken
  • 1/2 cup buffalo sauce
  • 1/4 shredded carrots
  • 4 TBP low fat blue cheese or ranch dressing

Directions:

Shred the chicken into a small bowl. Add the buffalo sauce and combine. Wash the lettuce, layer on the buffalo chicken, dressing and shredded carrots. Immediately serve.
