Turkey Sausage Breakfast Enchiladas

Brunch with friends and family is my favorite way to catch up and celebrate. But there are such limited foods that can be pre-prepped before guests arrive. Who wants to be stuck baking or cooking in the kitchen when you should be entertaining? I found the perfect enchilada brunch recipe that is prepared the night before. And it’s so easy and simple!

I’ve tried this recipe twice now and each time I’ve brought the dish over to a friend’s house and put into their oven which means this dish travels well. Each time I’ve made this recipe, it was absolutely delightful. I’m always sure to bring any leftovers home to my family which made great leftovers.

Remember: These must set overnight. It allows to egg mixture to soak into the tortillas.

Here is step-by-step how to assemble and prepare these enchiladas.

  1. Cook the turkey breakfast sausage
  2. Add the diced pepper and onion
  3. Scoop cooked turkey sausage mixture into each tortilla shell, sprinkle with cheese, roll up and place into baking dish
  4. Beat eggs, milk and seasoning and pour over the rolled enchiladas
  5. Cover and place in the refrigerator over night
  6. In the morning, add cheese on top, bake and serve!

Turkey breakfast sausage adds so much flavor. I don’t recommend you ground beef. My friend Christina is going to make this for Christmas morning brunch with her family and she’s making a version with chorizo and I image that added a lot of spicy flavor too if you have room in your diet for the extra calories. Turkey Sausage Brunch Enchiladas


  • 16 oz Mild Turkey Breakfast Sausage
  • 1/2 cup finely chopped red or green bell pepper
  • 2 cups shredded Cheddar cheese
  • 10 flour tortillas
  • 6 eggs
  • 2 cups skim milk
  • 1tablespoon all-purpose flour
  • 1/2 teaspoon onion salt
  • 1 teaspoon chili lime seasoning
  • Red pepper sauce, light sour cream and salsa for topping


1. Spray 13x9-inch glass baking dish with cooking spray.

2. In a skillet, cook the turkey sausage until crumbled and cooked. Add diced peppers and onions and cook 5 more minutes.

3. In each tortilla shell, add a 2 Tablespoons of turkey mixture and a sprinkle of cheese. Roll up and place seam down in baking dish. Repeat until all tortilla shells and turkey sausage is gone. Be sure to leave 1 cup of cheese for the top.

4. In a large bowl, beat eggs, milk, flour and onion salt and chili lime seasoning. Pour over tortillas. Cover; refrigerate 8 hours or overnight.

3. In the morning, heat oven to 350°F. Uncover dish; sprinkle remaining 1 cup cheese over top. Cover baking dish; bake 25 minutes. Uncover; bake 10 minutes longer or until set and cheese is melted. Serve with red pepper sauce, sour cream and salsa on the side.
