Parmesan Hash Brown Cups

I have a group of of friends that I’ve known since college and while we get together on pretty regular basis, we’ve never done a “Friends Thanksgiving.” But to be honest, my friends are not ones to conform with the “norm” so we took matters in our own hands and did a special brunch today. While we didn’t serve special Thanksgiving food or set a fancy table, we did have delicious food and were very thankful for each other!

I love nothing more than showing up at someone else’s house to cook. Anything to avoid the cleaning and the stress of entertaining. This allows me more time to plan recipes and take my time to perfect the food! Last night I prepared breakfast enchiladas and baked these delicious hash brown cups this morning. When I arrived at my friend Sara’s house, we just needed to preheat the oven. Easy!

All the pre-prep left plenty of time of time for talking about life!

To make these hash brown cups, everything is combined into a bowl and then scooped into muffins tins. I like to use a seasoning from Trader Joe’s called 21 Salute. It’s a all seasoning mix that contains 21 seasonings. Go figure!

Once the hash brown mixture is placed into the muffin tins, use the bottom of a glass to push down to mixture. This will allow the cups to brown easier and hold their shape. Final Recipe and instructions at the very bottom.

Above is the breakfast enchiladas we made that I would make again in a heartbeat because I was able to prep it the night before and put into the oven the next day which makes this dish perfect for entertaining!

The enchiladas had Jenni-o turkey sausage crumbles, green pepper and onion rolled into a shell. At the end, I just poured 6 whipped eggs over the top and placed in my refrigerator overnight. This was such a simple dish!

I love to cook, but I also love to braid and style hair since a very young age. My fiends all line up when we get together for a braid or quick style. It truly brings me back to college when we all hung out with no worries in the world. So simple.

Spending time with Sara, Rachel and Emily always means the following:

  1. I will be braiding someone’s hair at some point
  2. There will be laughter
  3. There will be tears (hopefully happy ones from the laughter!)
  4. We will eat
  5. There will be support and compliments
  6. We always leave stronger with a new plan and perspective on life!

Parmesean Hashbrown Cups

Ingredients

  • 1 bag frozen hash brown potatoes thawed
  • 1/2 cup diced onion
  • 3/4 cup real grated parmesan cheese
  • 3 tablespoons olive oil
  • 1 Tablespoon onion salt
  • 21 Salute Seasoning (Trader Joe's)

Directions:

1. Preheat the oven to 400 Degrees

2. Spray your non-stick muffin tins with non-stick spray.

3. In a bowl, press potatoes dry (this helps them crisp) with paper towels.

4. Mix rest of the ingredients in the bowl with the hashbrowns

5. Scoop into muffin tin, and evenly distribute all the hash browns each cup.

6. Sprinkle each with 21 salute and flatten with a pint glass.

7. Bake 45 minutes at 400 degrees.
