Seafood Egg Cups

My weekly egg quest continues…and this week I’ve decided to transform these into seafood heaven! This past week I’ve been on a seafood kick of sushi, tilapia and shrimp which is what inspired these seafood egg cups.

I still made my traditional batch of turkey pepperoni, Jennie-o turkey breakfast sausage & egg beaters version for The Hubs. We’ve been eating these egg cups for breakfast for the last month and they are so easy to prep for the entire week. For the turkey pepperoni recipe, see here.

If you are following weight watchers or even watching your calorie intake, these are a low point breakfast. Sometimes I even have them an a snack. A protein packed snack is the way to go! Two egg cups = 1 Weight Watchers Smart Point. That’s insane!!!

I added scallion on the top to add a little kick to the flavor. When I heat these up in the morning, I may consider putting a little dabble of Seafood cocktail sauce on top too.

I cook and meal plan because it’s a hobby and I love to share this interest with others. But this year, I have even more motivation to trim a few (20) lbs! I’m down 11 so far since October! Here are my motivations for 2017:

  1. The Hubs and I have a big 10 year anniversary and we planned a special trip to Cabo, Mexico. We haven’t been out of the country since our honey moon!
  2. My good friend Rachel is getting married in June in Vegas and there is a group of the ladies having a weight loss challenge. Each month we have to weigh in and whoever lost the biggest % doesn’t have to pay in $5. At the end, whoever lost the most % weight loss wins the pot of money.
  3. I want to look good for Rachel’s Vegas wedding! It’s going to be HOT in Vegas in June which means I may aim for a strapless dress.
  4. My daughter. This is always a constant motivation for me. I want to live a healthy life and be healthy in order to live a long heathy life for my family. I hope my choices can influence her to make heathy choices too!

There is national donut day and national friend day. I think these seafood egg cups call for a national egg cup day! I hope everyone has a wonderful week.

Seafood Egg Cups

Ingredients

  • Cooking Spray
  • Salt & Pepper
  • 1 1/2 cup Egg Beaters, Original
  • 18 jumbo shrimp, cooked, thawed
  • 4 oz imitation crab
  • 1 scallion, diced

Directions:

Preheat Oven to 400 degrees

1. Spray a 12 cup muffin pan with cooking spray. Fill each 3/4 full with egg beaters. Sprinkle each with a little salt & pepper.

2. Thaw shrimp under cold water, remove tails and cut each shrimp in half. Divide shrimp and shredded imitation crab evenly between 12 cups. Sprinkle tops with chopped scallion.

3. Bake at 400 degrees for 15 minutes.

6 servings (2 egg cups per servings)
