Garlic & Herb Laughing Cow Stuffed Chicken


Any recipe that calls for stuffing poultry is music to my ears. I developed this recipe awhile back based on the “everything chicken” recipe and my obsession with cooking with laughing cow cheese. Laughing Cow Light Cheese is an excellent cream cheese alternative and I even made an alfredo sauce with it once. While I’ve tried most of their flavors, the Light Garlic & Herb one is my favorite.

My good friend had surgery a few weeks ago and when I asked her how I could help, she requested this dish. Whenever I make this, it’s so easy and everyone wants the recipe. I decided it was time to finally add it to my vault of recipes here. I don’t think I’ve added yet because while it’s not the prettiest recipe, the flavor is absolutely amazing!


As for the rest of the ingredients, you can only find the Chili Lime seasoning at Trader Joe’s and it’s a key flavor. Trader Joe’s Chili Lime Seasoning is “the classic sprinkle for fresh jicama, mango and pineapple and is a delicious enhancement to grilled meats.” If for some reason you are unable to find it, you could create it yourself with Sea Salt, chili pepper, lime juice powder.


I love the olive garden dressing and you can find it at every store now. I use it in this recipe because I buy it in bulk at Costo which means I always have it on hand. To reduce calories or weight watchers points, Kraft Fat Free Italian could be substituted.

Even though I just made this last night with my friend, I could eat it again tonight. Right now this is favorite recipe!

Garlic & Herb Laughing Cow Stuffed Chicken


  • 6 Servings
  • 7 Smart Points Each (Per Chicken)
  • 2 lbs Chicken Breast (6 pieces)
  • 6 wedges Laughing Cow Light Garlic & Herb spreadable cheese
  • 10 tbsp Olive Garden Dressing
  • 2-3 Tablespoon Trader Joe's Chili Lime Seasoning
  • 3-4 cups vegetables (greens beans, broccoli, etc)


1. Pre-heat the oven to 400.

2. Place the chicken breasts on a sheet for Saran Wrap. Using a sharp knife, slice the breasts from the side (creating a top and bottom) almost all the way through. Open each breast at the slit and spread 1 laughing cow wedge inside. Spread cheese across the surface and close the breast, folding the top half back over the cheese. Sprinkle each breast with chili lime seasoning on both sides.

3. Place the stuffed breasts in a small skillet and sear for 2 minutes over medium-high heat. Flip the breasts and cook for another 2 minutes on the other side. Transfer the breasts to the prepared baking dish (9x12).

4. Pour the Olive Garden Dressing around the chicken in the baking dish and add the vegetables in and around the chicken.

5. Bake for 30-35 minutes until chicken is fully cooked through.
